Red currant sauce

I had some red currants in the freezer that a friend gave me from her garden last summer. This sauce was excellent on oat fiber pancakes and on yogurt.

Currants have 10 net carbs per cup, so this sauce has about 20 net carbs for the whole recipe.

2 cups red currants, leaves and stems picked off, thawed if frozen

1/2 tsp. guar gum

1/3 cup xylitol

In a pot, whisk together the guar gum and xylitol. Stir in the currants and any juices. Bring to a simmer, stirring frequently. Simmer for a couple minutes then remove from heat. Serve warm or cold.
