Tomato-cheese omelet

I came home from a play hungry and made this.


2 eggs

1/2 large tomato, diced

jalapeno cheddar, sliced

salt and pepper

Melt the butter in a frying pan for which you have a lid. Add the eggs and cook until the eggs begin to set. Sprinkle the tomato, cheddar, and salt and pepper over the top. Put the lid on top and cook until the egg is set and the cheese is melted. Fold the egg over the tomato mixture and then slide the omelet onto a plate. Eat.
