Jalapeno-caramelized onion cream cheese
I ate this on slices of cucumber – yum! It didn’t turn out spicy – you could certainly use more jalapeno. I roasted the jalapenos in the oven until they were puffed and brown on both sides, then let them cool in a bowl with a lid on it and peeled and seeded them with rubber gloves on to protect my hands. I’m storing them in oil in the fridge, figuring that the oil will taste good in cooking after I eat the jalapenos.
1 small onion, diced and caramelized
1 roasted jalapeno, chopped
1 cup cream cheese, softened
1/4 cup yogurt or sour cream
Using a hand blender, mix until the ingredients are well combined.
