Maple-xylitol pancake syrup

I finished the last of my commercial maple-xylitol pancake syrup today, so I mixed this up as a replacement. I haven’t tried it on pancakes yet, but it was nice mixed with plain yogurt. The maple flavouring I bought (at a local bulk store for $2.99 for 100 mL, which will make 20 batches) was brown, but the syrup turned out quite light in colour.

1/2 cup granulated xylitol

1/2 teaspoon guar gum (you might want to start with 1/4 tsp – 1/2 tsp made a syrup that was thick like corn syrup)

3/4 cup water

1 teaspoon of maple flavoring

pinch salt

Whisk together all the ingredients in a saucepan, bring to a boil, scrape into a sterile jar, and store in the refrigerator.
