Carrot cake!

The carrot cake from The Joy of Gluten-Free Sugar-Free Baking is really, really good. I might add a bit of guar gum to the cake next time as it’s a bit crumbly, but the cake is good otherwise and the frosting is amazing. I baked it in a 9×13 pan instead of 2 cake pans. The frosting was really thick, which was not a problem.
