When I was last at the fish market picking up free scraps (heads, bones, etc.) for the dogs, I picked up a couple pounds of frozen squid for $3.99/lb. I have tomato sauce simmering on the stove and plan to make one hour calamari.
Instead of the ramp bruchetta, I ended up eating it with some of the cracker I wrote about here. The calamari was fairly brothy, but tender and delicious.
(I was happy to read that, in addition to being inexpensive, squid is a sustainable choice.)
