I followed this recipe, with these changes: 3 Tbsp. ground chia and 1 Tbsp. ground flax instead of 4 Tbsp. of either (that was the last of my chia), lemon juice instead of vinegar, butter instead of coconut oil, and 4 extra-large eggs instead of 5 large eggs. It didn’t rise much, so it’s a fairly dense bread, but sliced thinly and toasted, it tasted really good.
