1 lb ground beef
1 clove garlic, minced
1 shallot, minced
seasoned salt (equal parts paprika, pepper, salt, garlic powder, and onion powder)
Cook the garlic and shallot in a bit of fat on medium-low heat until very soft.
Add some marsala (maybe a few tablespoons?) and continue cooking, stirring occasionally, until most of the liquid has evaporated.
Add a teaspoon or two of worcestershire sauce, some seasoned salt, and some salt, and let the mixture cool.
Combine the egg, ground beef and the cooled mixture.
Form into 4 patties and fry on medium in a hot cast iron pan until the bottom side is well browned. Flip, cover, and reduce heat to medium-low. Continue cooking until the patties are cooked through.
We ate these wrapped in big romaine leaves and topped with grated cheese, fried onions, mayo, mustard, hot peppers, and sliced pickles. Yum!
